Abstract
"An apple a day keeps the doctor away" is more truth than poetry. How many of us have ever stopped to consider or realize just how much meaning that statement carries? In it we can find two of our most fundamental food and nutrition principles, namely, safety and adequacy. The importance of these two principles cannot be over-estimated.
