Safe Pork 2001The world wide interest in food safety is still growing which is demonstrated by the large increase in the number of submitted studies, 169 this year compared to 100 contributions in Washington. Contributions came from 31 different countries from all continents of the world. As the name of the symposium indicates, also other food borne pathogens than Salmonella in pork have been included for the first time. This makes good sense because for example once samples have been taken they might be used for investigation into other pathogens then Salmonella as well, collected data can be analysed for multiple pathogens and intervention strategies might influence more than one pathogen. Most importantly however is the fact that if we aim to contribute to the production of safe pork, the study of at least all microbiological hazards is necessary. Thirty three contributions are about other pathogens or combinations of other pathogens with Salmonella. These pathogens are Yersinia, Campylobacter, Listeria, Clostridium, Toxoplasma, Trichinella and E. coli O157.
