The SafePork conference series began in 1996 to bring together international researchers, industry, and government agencies to discuss current Salmonella research and identify research needs pertaining to both pig and pork production. In subsequent years topics of research presented at these conferences expanded to include other chemical and biological hazards to pig and pork production.

Abstract

In a survey carried out on raw meat on sale in retail stores in 1999 and 2000, Salmonella was found in 33 (6.2%) of 533 pork samples, the predominant serotype being Salmonella Typhimurium ( 14x) of which 3 isolates belonged to phage type 0104. In minced pork/beef salmonella was isolated from 22 (7.8%) of 281 samples. Also here S. Typhimurium (6x) was the predominant serotype. Campylobacter was not isolated from 524 samples pork and from 4 samples (1.5%) minced pork/beef. YTEC 0157 was detected in 1 (0.7%) of 153 samples pork and in 1 of 50 samples minced pork/beef.
